A bit pricey, but the skill on display is undeniable. I recommend the mackerel soba

Notes

  • Run by a craftsman who spent 35 years making soba in Japan itself
  • The soy-sauce base and umami of the mackerel soba are truly outstanding. Though of course, at around 20,000 won a bowl, it's pricey...
  • The warm soba (onsoba) can have a slight fishy smell, so if that's really not your thing, I'd recommend going with something else
  • That said, even though I'm not a fan of fishy smells myself, the umami here more than made up for it, and I enjoyed it just fine
  • It comes topped with ginger, and personally I loved that combination. Watch out if you don't like ginger though!
