Subok Dwaeji Gukbap

수복돼지국밥

BusanYeonsan-dongKoreanRice Soup (Gukbap)Pork Rice Soup (Dwaeji Gukbap)

The Nvidia of dwaeji gukbap (pork and rice soup). A true local favorite, prices keep climbing, but there's still no substitute. Top-tier broth richness and meat quality.

Notes

  • My recommendation is the suyuk-baekban (boiled pork slices served as a full meal set). The meat quality is on another level. You get to taste real hangjeongsal (pork jowl) suyuk at its best. The photo is the suyuk-baekban.
  • Prices keep going up, but since it's a true local institution, there's no real substitute. That said, plenty of places come within 70-80% of it, so it's not a bad idea to hunt those down too.
  • If you eat dwaeji gukbap here and then move up to Seoul, you won't be able to stomach similar soups like sundae-gukbap (Korean blood sausage soup) or suyuk-gukbap (boiled pork slice soup) because they taste so bland by comparison (I actually know quite a few friends like this).
  • Heads-up When you eat dwaeji gukbap, don't forget to add saeujeot (salted fermented shrimp) and jeongguji (garlic chives)!! (Skip them and you'll make any Busan native furious.)
